Fruit production - Apricots
Algerian fruit production is very specialized, so each region of the country is distinguished by its agricultural specificity; Biskra with dates, Skikda with strawberries, Miliana with cherries and the Aurès region with apricots.
The apricot is a fleshy fruit, rounded in shape, with a hard core containing a single large seed. The flesh is sweet, not very juicy. Apricot is rich in pectins which swell easily with water and which give it its soft side. The velvety skin of the fruit, whose color, sometimes speckled, can range from yellow to red.
The varieties of this fruit do not ripen at the same time, the harvest takes place from the beginning of June to mid-August. The Aurès region is known for the cultivation of these fruit trees, especially in the town of N'gaous.
Apricots are eaten either as fruit or made into jam or syrup.
The Cherry is the most popular of the small red fruits. It is a drupe, spherical in shape, generally more or less dark red, or yellow.
The fruits mature at the beginning of June. The favored expansion zones are Kabylia, notably Aïn El Hammam and Larbâa Nath Irathen, as well as Médéa, Miliana and Tlemcen.
