Chakhchoukha (also spelled Shakhshukha or Chekhechoukha) is a famous, celebratory Algerian culinary specialty originating from the Aurès and eastern desert regions like Biskra.Before serving, the torn flatbread pieces are steamed over the boiling stew so they soften and absorb the aromatic steam. The bread is then layered in a wide family dish, drenched in the rich red sauce, and topped with the meat and chickpeas.Major regional variations include Chakhchoukha Biskria (from Biskra, often intensely spicy) and Chakhchoukhat Dfar (where the bread is pinched into tiny, uniform square shapes instead of being torn)
